As the name implies, Tippling Club does take its tipples seriously. But an experience at Tippling Club is as much about the vanguard-style cuisine as it is about the drinks.
Tippling Club at Dempsey Village is a joint initiative between award-winning mixologist, Matthew Bax, and the ex-head chef of Shannon Bennett’s Vue de Monde, Ryan Clift. And the duo has crafted a dining format that pairs Bax’s unique cocktails to exquisitely prepared dishes from Clift’s 6-course and 10-course degustation menus.
A word of warning: Clift prides himself on creativity and follows no culinary conventions. Therefore, expect your gastronomic journey to be a marathon of sensorial revelations.
Poached quail breast with steamed surf clams is served bathed in a calming konbu and dashi consommé vacuum-infused at the table with Thai basil, orange zest and fennel.
After multiple courses, count on Clift to arrest your senses with a finale of deconstructed pear tartin; a provocative and multi-dimensional treat of caramel-packed mock pear served alongside a refreshing tagliatelle of shaved pear.
If experimental noveau cuisine is not up your alley, join the in-crowd and come for Bax’s quirky and highly addictive bar list: snows of Kilimanjaro, whisky matcha affogato or even kopi-O.
