CNNGo Mumbai Masala Chai
2 cardamom pods
1 stick of cinnamon (2 inches)
Pinch of ground ginger and black pepper
Grind then pour the spice mixture into four cups of water and bring to a boil. Once boiling, remove from heat and let mixture soak for a minute. Add two tablespoons of tea (Assam works best) and boil again with milk and sugar to preference, until mixture brims over.
Let the chai stand again for a minute, then strain from a height several times back and forth. This process blends the spices together and creates the masala chai aroma enjoyed daily in CNNGo's Mumbai office.
