VIEW62 by Paco Roncero: Tapas are so last decade
Hong Kong's celeb chef invasion continues with the highly regarded Spanish cook opening VIEW62
Known as Ferran Adria's most famous disciple, super-chef Paco Roncero is bringing European restaurant VIEW62 to Hong Kong.
To open in May, the restaurant will showcase Roncero's avant-garde European cuisine, punctuated with innovative use of olive oil, for which the chef is renowned.
CNNGo: Why VIEW62? Why Hong Kong?
Roncero: The last time I was in Hong Kong, I was talking to Anna Chau (CEO of King Parrot Group). She proposed the idea and I loved it.
I believe Hong Kong is a city of gastronomy. Very wonderful.
CNNGo: What do you make of European cuisine in Hong Kong?
Roncero: At the moment, European cuisine in Hong Kong is very French and Italian. Spanish cuisine in Hong Kong is only traditional Spanish cuisine with tapas.
We are introducing Spanish cuisine with different techniques, flavors and textures than what Hong Kong people are used to. We're cooking cuisine that is very modern, with Spanish roots.
We will be introducing the Spanish cuisine in VIEW62 and "nouvelle cuisine."
CNNGo: What can we look forward to at VIEW62 by Paco Roncero?
Roncero: The space is very special -- it is circular and revolving.
But the most special thing is still the menu, which (features) many different sensations, flavors and textures that are Spanish.
There will not be one or two signature dishes, but many dishes. But the main ingredient is olive oil.
CNNGo: How do you see competition among restaurants here?
Roncero: I don't see the rest of the restaurants as competitors. We are different.
CNNGo: So you're not concerned about chefs such as Mario Batali and Michael White opening restaurants in Hong Kong this year?
Roncero: It's very good for the city. Many people come to Hong Kong to taste different restaurants, they come to Mario Batali one day and Roncero the other day. So it is beneficial to all restaurants, not only for one.
CNNGo: How do you come up with your dishes?
Roncero: It is just work, work, work.
If you want to do something with potatoes, you study potatoes and the many, many ways you can work with potatoes -- fried, boiled, stewed.
Then we work in different techniques and at the end, we find the best approach.
CNNGo: What do you do when you're not working?
Roncero: I get up at 6 a.m. to go running.
CNNGo: Anything you'd like to see in Hong Kong?
Roncero: Do you have any ideas? Ha ha. I think I will focus on the restaurant at the moment.
